Thermomix Petit pois with chourizo (Portuguese recipe)

About this recipe:

This is one of my favorite Portuguese recipes for the Thermomix and the only reason I’m adding it here is because I cook it often and don’t want to waste time looking for and reading the book when I can use my mobile to follow the recipe. There are many variations to this recipe, this is mine.


  • 50g fresh coriander, washed and dry
  • 120 grams onion
  • 2 garlic cloves (approx. 12 grams)
  • 150 grams tomato (ripe, if possible)
  • 50 grams olive oil
  • 200 grams chourizo (thinly sliced)
  • 1000 grams frozen petit pois
  • 1 cube vegetable stock
  • 150 grams white wine
  • 100 grams water
  • 6 grams marine salt (freshly grinded, if possible)
  • 1 gram pepper (freshly grinded, if possible)
  • 6 eggs (optional)


  1. With a dry bowl, chop the coriander by dropping the leaves and stems on Speed 10
  2. Remove the coriander from the TM bowl and reserve
  3. Place the onion, garlic, tomato, olive oil in the TM bowl and chop for 5 seconds / Speed 7
  4. Braise for 5 minutes / Varoma / Speed 1
  5. Slice the chorizo thinly whilst it’s braising, if it’s not yet sliced
  6. To make the sauce smooth, blend for 15 seconds / Speed 7
  7. Add the chourizo and cook for 3 minutes / Varoma/ Speed 1
  8. Add the petit pois, the vegetable stock cube, salt, pepper, wine, water and cook for 15 minutes / Varoma / Reverse speed / Speed Spoon
  9. Taste and correct seasoning if required
  10. If the petit pois is not yet properly cooked, continue cooking for 5 minutes / Varoma / Reverse speed / Speed Spoon
  11. In a large bowl, mix the reserved coriander and the petit pois
  12. Serve immediately

Optional but very tasty steps:

  1. Break the eggs into a bowl
  2. Pour part of the petit pois in a frying pan, bring it to boil and poach the eggs
  3. Serve immediately
